Let me see if I understand this correctly. Someone who is obviously a combatant at night might not be considered a combatant during the day, when he's baking bread? Someone who fires rockets at civilians during the day might not be a combatant at night when he goes home to sleep in his own bed? The definition of "Combatant" CANNOT depend on whether the combatant has decided, at his convenience, to take a time out to adopt another persona or sleep in his own bed.
